Chicken, Rice & Beans

I'm a sucker for a rotisserie chicken. They're so tasty and make meals easy. My local co-op has a special on Tuesdays on organic/free range rotisserie chicken which inspired me to purchase one this week! This dish is basically a quick version of rice and beans, with diced chicken added. You can also make it without chicken for a vegetarian option!

1 cup rotisserie chicken, diced

1 clove garlic, minced

1 onion, diced

1 can diced tomatoes (or 2 fresh tomatoes, diced, with juices)

1 can black beans

1 cup rice

2 cups chicken stock

Cilantro, minced

Green onions, chopped

Lime wedges

Olive oil

Salt & pepper

  1. In a skillet, sauté onions and garlic in olive oil over medium-high heat until translucent.

  2. Add tomatoes, beans, rice, chicken stock. Bring to a boil, then cover with a lid and turn heat to low.

  3. Let this simmer for about 30 minutes, or until almost all of the liquid has absorbed, and the rice is tender. Add in chicken and salt & pepper to taste.

  4. Garnish with green onions, cilantro, and a lime wedge. Add hot sauce if you'd like!
